Catholic Recipe: Chicken Cacciatore

INGREDIENTS

  • 1 chicken (4 pounds), cut up
  • 1/2 cup seasoned flour (salt and pepper added)
  • 1/3 cup vegetable oil
  • 1 garlic clove
  • 2 medium onions
  • 1 green pepper
  • 1 can (1 pound) tomatoes
  • 1 can (6 ounces tomato paste
  • 1/4 pound mushrooms, sliced
  • 1-1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 3/4 teaspoon oregano

Cacciatore is another popular Italian dish. This recipe is basically stewed chicken in a tomato and mushroom base.

DIRECTIONS

Dredge chicken in seasoned flour. Brown on all sides in hot oil. Mince garlic; chop onions; dice green pepper; add with tomatoes, tomato paste, mushrooms, salt, pepper, and oregano. Simmer for about 1 hour or until chicken is tender. Makes 6 servings.
