Catholic Recipe: Easy Fruit Cake
This fruitcake uses honey and applesauce for sweetening, lessening the amount of sugar in the recipe.
Mix and sift first 5 ingredients. Cream shortening; add sugar and honey gradually; continue to cream until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in applesauce; stir in mixed fruits and peels. Add dry ingredients gradually, beating well with spoon until blended. Pour into greased and floured 9-inch tube pan.
