DIRECTIONS
Shells: Mix flour, salt and sugar. Add butter, wine and beaten egg. Knead on floured surface until dough becomes elastic. Roll out dough thin and cut into 4" circles. Wrap each circle around a cannoli tube. Paint a little beaten egg on wrapped dough to seal and prevent unfolding. Deep fry in hot shortening until brown. Drain on a paper towel. Using tongs, carefully slip the tubes out of the rolls. Cool and fill with ricotta filling.
