Catholic Recipe: Cheese Turnovers
INGREDIENTS
- 2 eggs, well beaten
- 1/2 cup sifted all-purpose flour
- 3/4 cup water
- 1 tablespoon melted butter
- pinch salt
Filling:
- 1 pound dry cottage cheese
- 2 eggs
- dash ground cinnamon
- 2 tablespoons sugar
- dash of salt
- 1/8 teaspoon vanilla
- sour cream

DIRECTIONS
Make thin batter of beaten eggs, flour. Add water gradually; beat until smooth. Add melted butter, salt; mix well. Pour thin streams of batter in center of heated, greased 10-inch skillet, distributing batter evenly. Fry until pancake is smooth and firm on top, lightly browned on bottom. Turn out on clean towel. Repeat.
Filling:
Combine cheese with remaining ingredients, except sour cream; mix well.Spread warenyki with filling. Tuck sides in; fold or roll in shape of envelope. When all turnovers are filled and rolled, brown in butter in skillet on both sides until firm. Top with sour cream. Serve hot.
