Catholic Recipe: Meatless Antipasto
INGREDIENTS
- 2 cups black olives, pitted
- 2 cups green olives, pitted
- 2 cups diced celery
- 4 cloves garlic, crushed
- 1 onion, sliced
- 1/2 cup capers
- 1 tablespoon parsley, chopped
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon dry oregano
- 1/2 cup olive oil
- 6 tablespoons wine vinegar

This recipe is part of the Sicilian tradition of the St. Joseph Altar. Usually the altar has all meatless dishes, and also no cheese.
DIRECTIONS
Remove seeds and crush olives. Mix all the ingredients in a container, cover and place in refrigerator for two or three days.
