Catholic Recipe: Sweet Fritters

INGREDIENTS

  • 2 eggs, separated
  • 2 cups heavy cream
  • 2 tablespoons sugar
  • 1/2 cup sifted all-purpose flour
  • finely chopped candied citron
  • bread crumbs
  • butter
  • confectioners' sugar

DIRECTIONS

Beat together egg yolks, cream, sugar. Blend in flour. Place mixture in double boiler; cook until thick; do not allow to boil. Stir in citron. Pour out on lightly greased flat pan. Cool. Cut in 2-inch squares. Dip in egg whites. Dip in bread crumbs. Fry in butter until golden brown. Sprinkle with confectioners' sugar; serve hot.
