Catholic Recipe: Pockets with Cheese or Berries
INGREDIENTS
- 2 cups sifted all-purpose flour
- 2 eggs
- 1 cup cottage cheese
- 1 tablespoon butter, melted
- 2-3 tablespoons sugar
- 1/4 teaspoon ground cinnamon
- 3 tablespoons currants
- 1 egg beaten

DIRECTIONS
Make "well" in flour. Add eggs, beat. Knead. Roll out very thin on floured board. Cut in 2-inch squares. Combine cottage cheese, butter, sugar, cinnamon, currants. Add egg. Blend. Place 1 spoon of cheese mixture on square of dough. Fold dough over to form triangle. Pinch moistened edges together very tightly. Boil in 4 quarts salted water for 30 minutes. Drain. Serve with melted butter, sprinkled with toasted bread crumbs.
Variation: Make mixture of blueberries or huckleberries with sugar. Place small amount of berries on each dough square. Fold as for cheese pocket. Serve with melted butter, sour cream.
