Catholic Recipe: Anniversary Cake
This is another pretty cake for an anniversary party. Use fresh flowers for trimming.
Stir shortening until softened. Mix and sift flour, baking powder, sugar, and salt; add to shortening. Add half the milk or half-and-half, with egg yolks, to shortening and flour mixture; mix until flour is dampened. Beat 1 minute. Add remaining milk and flavoring. Beat 2 minutes. Bake in greased and floured 9-inch tube pan at 325° for 1-1/4 hours. Let stand in pan 5 minutes. Remove from pan to cake rack. When cool, frost with cooked frosting made with 4 egg whites. Tint frosting with food coloring, if desired. Fill center with small fresh flowers.Recipe Source: Cook's Blessings, The by Demetria Taylor, Random House, New York, 1965
