Catholic Recipe: Curried Eggs on Macaroni

INGREDIENTS

  • 1/4 cup butter or margarine
  • 1/4 cup diced green pepper
  • 1/2 cup diced celery
  • 1 Tablespoon minced onion
  • 1/4 cup flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon curry powder (or to taste)
  • 2 cups milk
  • 8 hard-cooked eggs, halved
  • hot cooked macaroni

Served over macaroni, the curried eggs are a change for days of abstinence.

DIRECTIONS

Heat butter or margarine in saucepan. Add green pepper, celery, and onion; cook until soft but not brown. Add flour, salt, pepper, and curry powder; stir until blended. Add milk slowly; cook and stir until thickened. Gently fold in eggs. Pour over bed of macaroni. Makes 6 servings.
