Catholic Recipe: Krabeli (Springerle)

  • 2 eggs
  • 2 Tablespoons anise seed (from your herb garden)
  • 1 pinch potash (closest substitute is baking soda)
  • 1 cup flour
  • 1 grated lemon peel

Also Called: Springerle

The Swiss recipe is called Krabeli. It's better known as Springerle in German, but you do not need the fancy molds which the Germans use. One of our friends, a doctor of philosophy and a chemist, translated the recipe from his Swiss cook book. The translation has both a Swiss and a chemical flavor, but the cookie is delicious.

DIRECTIONS

"One stirs the sugar and eggs until a uniform foam. Add other material and knead into dough. Form into little rolls about length and size of a finger and put on a pan in the form of a quarter moon. Make oblique 'schnits' on the outside perimeter. (At this point he drew a picture.) Take to a warm room and let stand 12 hours. In moderate oven bake until light yellow."
