Catholic Recipe: Risgrynsgröt (Rice Porridge)
Also Called: Risengrød; Julegrot
Many heavier foods are traditional to the celebration of New Year's Eve in Scandinavian countries. A favorite dinner is roast beef, baked potatoes, Risgrynsgröt (rice porridge), Lefse, and Kringler.
Wash the rice, drain, and cook in salted water in the top of a double boiler. Cook slowly until tender, or for about one hour. The water should be absorbed by that time. Add the butter, the heavy cream which has been whipped, and the sugar.
