Catholic Recipe: Korolevskaja Paska (King's Easter Pudding)

  • 1 quart sour cream
  • 2 quarts heavy cream
  • 1 cup sugar
  • 1 tablespoon vanilla

In Russia, eggs and dairy products were forbidden foods during Lent. This sweet cheese mold celebrates the return of those foods to the table on Easter.

DIRECTIONS

Mix yolks with sour cream in a saucepan. Add heavy cream, gradually. Place over low heat; stir constantly until whey forms. Draw off whey. Add sugar, vanilla. Drain in cloth bag under heavy weight. Reserve overnight in cold place. Serve at consistency of cream cheese. Yield, 10 servings
