Catholic Recipe: Bobajka (Poppy Seed Potato Strips)
INGREDIENTS
- 1/2 cup poppy seeds
- 2 tablespoons honey
- 1 cup sugar
- 6 large potatoes, cooked, mashed
- 1/2 teaspoon salt
- 3 1/2-4 cups sifted all-purpose flour
- 1/2 cup butter

This is a traditional Hungarian treat served around Christmas. The dough is made from mashed potatoes and topped with a glaze and poppy seeds.
DIRECTIONS
Glaze: Combine poppy seeds, sugar, honey. Set aside.
Strips: Combine mashed potatoes, salt, flour. Knead until dough becomes medium stiff. Roll dough on lightly floured board to 1/2-inch thickness. Cut in 2 x 2 1/2-inch strips. Place in large kettle of boiling water. Cook until strips float to top. Drain. Immerse 1 minute in cold water.
Heat butter in large baking dish. Arrange strips of dough in dish. Bake 5 minutes at 425°. Remove from oven. Pour glaze over top. Serve immediately. Yield, 6 servings
