Catholic Recipe: Quick Vegetable Salad
This dish can be prepared ahead of time, and combines both the potato and vegetables of the meal.
DIRECTIONS
Cook 1 package instant sliced or diced potatoes according to package directions; drain; chill. Cook 1 package frozen mixed vegetables; drain; chill. Just before serving, combine potatoes and mixed vegetables. Mince 1 medium onion (or use 1/2 cup frozen minced onion if your grocer carries it); add; mix well with enough mayonnaise to hold ingredients together. Makes 6 servings.
