Catholic Recipe: Fourth of July Dinner Menu
Like Thanksgiving, the Fourth of July is a holiday that belongs only to the United States of America. In a way it too is a day of thanksgiving for the independence we once achieved and have since maintained.
In New England, and carried from New England into other sections of the country, the traditional feast on Independence Day features fresh salmon and early garden peas. Other dishes are added ad lib. For example:
Chilled Tomato Juice Salmon Steaks, Poached or Broiled Early Garden Peas Creamed New Potatoes with Chives Sweet Gherkins Black Olives Tossed Salad Special Strawberry Shortcake (see recipe) Iced Coffee or Tea (see recipe)Recipe Source: Cook's Blessings, The by Demetria Taylor, Random House, New York, 1965
