Catholic Recipe: Clam Fritters
Fried clams are a universal favorite. Here's how to make them at home.
Sift flour, baking powder, salt, and paprika into medium-sized bowl. Combine eggs and milk; beat slightly; pour into flour mixture; blend well. Stir in drained clams. Pour vegetable oil in heavy frying pan to depth of 1/4 inch; heat to 360°. Drop clam batter by tablespoonfuls into hot fat; fry 3 to 4 minutes or until brown; turn; brown other side. Serve with ketchup or chili sauce. Makes 4 to 6 servings.Recipe Source: Cook's Blessings, The by Demetria Taylor, Random House, New York, 1965
