Catholic Recipe: Jesse Tree Cookies

  • 1 cup butter
  • 2/3 cup brown sugar
  • 1 egg
  • 1 teaspoon almond extract
  • 1/2 teaspoon salt
  • 2-1/2 cups flour
  • 1 cup oats

These cookies would make a wonderful dessert on Sundays during Advent, or as a treat during the "O Antiphons" during the final part of Advent, beginning December 17. They could also be used to cut out the symbols of the Jesse Tree.

DIRECTIONS

Blend butter, sugar, egg, extract, salt. Add flour, mix thoroughly. Stir in oats. Chill dough. Roll out to 1/8 thickness. Cut, bake at 350 degrees, 8 to 10 minutes. Unless by the time you read this, some enterprising firm has already put out a line of Jesse Tree cutters, you will have to make your own out of cardboard or tin or freehand knife.
