Catholic Recipe: Potato Pancakes II
Also Called: Boxty Pancakes
Potatoes can take on so many different flavors and make up so many different dishes. This is an Irish version of the Potato Pancake, or Boxty. Potatoes were used for festive dishes.
DIRECTIONS
Grate pared potatoes. Add well-beaten egg yolks, crumbs and salt. Beat egg whites until stiff and fold in. Drop by spoonfuls into hot fat in frying pan. Brown on both sides. Drain on paper toweling.
Note: If potatoes are watery, drain excess. (Mrs. Edmund Nowak)
