Catholic Recipe: Beef Broth

INGREDIENTS

  • 1 clove garlic, minced
  • 3 tablespoons oil
  • 1 can tomato sauce
  • 2 1/2 lbs. soup meat, diced
  • 1/2 teaspoon vinegar
  • 1/2 teaspoon sugar
  • 2-3 red pimentos
  • 6 green, pitted olives
  • 4 capers
  • 1/2 cup beef broth

Beef broth is made by cooking 2 1/2 lbs. of chuck roast in 2 quarts of water with 1 grated onion and salt to taste. Mexican cooks make an interesting dish from the leftover soup meat called Ropa vieja, or, literally, "old clothes." It is sometimes served under the title "Mexican burgers."

DIRECTIONS

Lightly brown the minced garlic in oil, add the tomato sauce and stir for about 2 minutes. Add cooked meat and fry for about 5 minutes. Add vinegar, sugar, pimentos, olives, and capers and simmer for 8 minutes with 1/2 cup broth.
