Catholic Recipe: St. Gall Cheese Balls

INGREDIENTS

  • 1 cup grated mature cheddar cheese
  • 2 eggs
  • 1/2 teaspoon mustard
  • 1/2 teaspoon paprika
  • 2 cloves garlic
  • 1 cup plain flour
  • salt and pepper

Festive appetizer for All Saints Day. Eat alone or with crackers.

DIRECTIONS

Rub the cut garlic round a mixing bowl. Add grated cheese, egg yolks, mustard, paprika, salt and pepper. Fork well together.

Whisk the egg whites until stiff. Stir the egg whites and flour alternately into the cheese mixture until a softish dough is formed. Make into small balls.

Fry in hot fat for 5 minutes until golden, crispy and well risen. Serve hot with a tomato sauce.
