Catholic Recipe: Shrimp Croquettes
Also Called: Croquettes de Camaroes
In Portugal the festive food for the Feast of the Assumption is shrimp, and these shrimp coquettes are a fancy way of serving shrimp.
DIRECTIONS
Heat butter in skillet. Sauté onion and garlic until brown. Remove from heat. Add fennel leaves and bread to onions. Heat milk. Pour over contents of skillet, stirring constantly. Allow to stand 10 minutes, until bread is soft. Add shrimps, seasoning. Shape into rolls the size of a small sausage 1 inch thick and 2 inches long. Dip into flour, then into egg. Roll into bread crumbs. Fry in deep oil heated to 370° for 3-4 minutes or until well browned. Drain on absorbent paper.
