Catholic Recipe: Barbecue Ribs

INGREDIENTS

  • 4 pounds pork spareribs
  • 1 cup brown sugar
  • ¼ cup ketchup
  • ¼ cup soy sauce
  • ¼ cup Worcestershire sauce
  • ¼ cup rum
  • ½ cup chili sauce
  • 2 cloves garlic, crushed
  • 1 teaspoon dry mustard
  • Dash ground black pepper

This recipe is easier than it sounds. Cook the ribs the day before, marinate them overnight, and grill them for a quick dinner the next night. The sauce tastes even better after it's cooked. It's not a dipping sauce. Try the marinade on chicken as well.

DIRECTIONS

Preheat oven to 350 degrees. Cut spareribs into serving sizes. Wrap ribs in double thickness of foil and bake for 1-1/2 hours. Unwrap and drain drippings. Transfer ribs to a large roasting dish. Combine brown sugar, ketchup, soy sauce, Worcestershire sauce, rum, chili sauce, garlic, mustard, and pepper in a bowl. Pour over ribs.

Cover and marinate in refrigerator for 1 hour or overnight. Remove ribs from sauce. Bring sauce to a boil and reserve for basting. Preheat grill to medium-high heat. Grill ribs, turning and basting with sauce, 30 minutes. Or bake ribs at 350 for 30 minutes, basting with sauce.
