These make a lovely change and quite a satisfying meal. Make pancakes with basic batter (see linked recipe) but fill with one of the following:
DIRECTIONS
Chicken and corn: mix together diced cooked chicken and canned sweetcorn with a basic white sauce. Garnish with a little fried banana.
Minced beef and tomato: mix together some left-over minced meat with a little from a tin of tomato soup to moisten it. Fill the pancakes with this and pour the rest of the tin of soup over them. Heat through in the oven for 20 minutes at 375 degrees.
Bacon and cheese: chop and fry together any combination of bacon, onion, peppers and mushrooms and stuff the pancakes. Pour 1 cup of cheese sauce over the pancakes. Sprinkle some grated cheese on top and brown under the grill.
