Catholic Recipe: Lincoln Pancakes
INGREDIENTS
- 2 cups sifted all-purpose flour
- 1 cup yellow cornmeal
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons salt
1/2 cup sugar - 2 eggs, slightly beaten
- 1/4 cup butter or margarine, melted
- 3 cups buttermilk

DIRECTIONS
Sift together dry ingredients. Combine eggs, melted butter and buttermilk. Mix well. Add to dry ingredients. Mix only until moistened. Pour about 1/4 cup batter on hot, lightly greased griddle. Brown on both sides and serve with pats of butter and warm maple syrup. --Mrs. George Moldovan, Lorain.
