Catholic Recipe: Marinated Mushrooms

    INGREDIENTS

  • 2 pounds mushrooms
  • 5 pounds onions, sliced
  • 1 cup water
  • 2 cups vinegar
  • 3 bay leaves
  • peppercorns, salt

DIRECTIONS

Remove stems from mushrooms. Simmer mushrooms, onions in water in saucepan until tender. Add remaining ingredients. Boil 5 minutes. Cool. Conserve in glass containers for at least one week. Yield, 1 quart
