Catholic Recipe: Pickled Mushrooms

    INGREDIENTS

  • 2 cans (6 ounces each) broiled mushroom crowns
  • 1/2 cup tarragon vinegar
  • 1/2 cup dark brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon peppercorns
  • 1 bay leaf
  • 1 garlic clove, slivered

These homemade pickled mushrooms need to be made a day in advance.

DIRECTIONS

Drain mushrooms, saving broth. Combine 1/2 cup broth with remaining ingredients in small saucepan. Bring to boil, stirring until sugar dissolves. Pour over mushrooms. Cover tightly; chill at least 24 hours. Drain. Serve with cocktail picks.
