The time will surely come when you will be elected chairman of the committee for a church or community supper. You will want to be prepared with menu ideas and quantity recipes to help your committee put on the best possible supper at a price that will assure a reasonable profit.

Select your subchairmen carefully for their enthusiasm, energy, and organizing ability. You will need four — planning, preparation, serving, and clean-up chairmen — who in turn will select committee members to share in the responsibility, the work, and the final pleasure of accomplishment.

Sometimes a simple casserole or stew is not enough for hearty appetites. Here's a meat and potato menu for 50.

DIRECTIONS

Figure on 2 rolls and 1 ounce of butter or margarine per person. Homemade relishes may be contributed — the pickle sticks and jelly are optional.
