Catholic Recipe: Game Hens with Pineapple-Walnut Stuffing

    INGREDIENTS

  • 4 Rock Cornish game hens
  • Pineapple Walnut Stuffing (see recipe)
  • 3/4 cup lemon juice
  • 1/2 cup honey
  • 1/4 cup grenadine syrup
  • 1/2 cup butter or margarine

This is the main entree for the first New Year's Eve Midnight Supper. This is a simple recipe, but impresses everyone.

DIRECTIONS

Wash hens; pat dry. Stuff. Combine lemon juice, honey, and grenadine syrup. Set aside 1/2 cup for basting; add remainder to softened butter or margarine. Spread over surface of birds. Roast at 350° for about 1 hour or until done, brushing occasionally with honey mixture. Makes 4 servings.
