Catholic Recipe: Shish Kebabs

  • 2 pounds lamb
  • 3 chopped onions
  • 1/3 cup sherry
  • 3 Tablespoons cooking oil
  • 1 teaspoon sweet marjoram
  • 1 Tablespoon salt
  • 1/2 teaspoon pepper

If you prefer a more inexpensive cut of lamb, buy lamb from the shoulder and serve Shish Kebabs cut in one inch cubes.

DIRECTIONS

Cut lamb into one-inch cubes. On Holy Saturday, cover the meat with onions, wine, oil, marjoram and seasoning. Marinate the cubed lamb. Soak in sauce overnight. On Easter Sunday, thread the lamb on skewers and broil 15-20 minutes.
