Catholic Recipe: Caucasian Shashlik

  • 2 pounds boned lamb shoulder
  • juice of 2 lemons
  • 1/2 cup finely chopped parsley
  • 1 teaspoon dried dill
  • 1 garlic clove, slashed
  • salt and pepper

Also Called: Shish Kebab

Here's a Russian version of lamb Shish Kebab, which is chunks of marinated meat and vegetables that are threaded on a skewer and grilled or broiled.. Allow time for the ingredients to soak in the marinade.

DIRECTIONS

Cut lamb in 1-1/2-inch cubes; put in deep bowl. Combine remaining ingredients; pour over lamb. Chill several hours. Drain lamb. Run skewers through lamb cubes; cook over charcoal or under broiler, turning often to cook evenly, about 20 minutes or to desired degree of doneness. Makes 4 servings.
