Catholic Recipe: Salsiccia con Peperoni II

Also Called: Sausage with Green Peppers

The Italians, who are not overfond of sweets, want one more taste of luscious Salsiccia Con Peperoni (sausage with sautéed green peppers) before Lent. We have not been particular about the kind of sausage used in our house. Even a string of hot-dogs or mett will do.

DIRECTIONS

Roll sausage in a circle. Place on broiler about six inches under the fire. Prick the sausage with a fork to let the fat escape. Broil 30 minutes. Sauté green peppers in olive oil. When ready to serve, arrange peppers over sausage. Sprinkle with parsley and fennel seed.
