Catholic Recipe: Mormor’s Kakor

  • 3/4 cup margarine
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 2 tablespoons molasses
  • 1-7/8 cup flour
  • 1 teaspoon soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 teaspoons ginger
  • 1/2 teaspoon cloves
  • 1 teaspoon vanilla

If you're in a hurry and haven't time to roll out cookies (see the more lengthy recipe for Boel's Pepparkakor) here are some drop ginger cookies. They're not as sheer and crisp as the snaps, but the flavor is great.

DIRECTIONS

Beat first five ingredients. Mix dry ingredients and add all at once. Add vanilla, stir well. Drop by small teaspoonfuls on greased cookie sheet. Bake 12 to 15 minutes at 350 degrees.
