Catholic Recipe: Soft Molasses Cookies

    INGREDIENTS

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 1 cup dark molasses
  • 1 Tablespoon lemon juice
  • 3-1/2 cups sifted all-purpose flour
  • 1 teaspoon cinnamon
  • 3/4 teaspoon ground cloves
  • 1/2 teaspoon ginger
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/3 cup boiling water

Soft and spicy molasses cookies. These require some time to chill thoroughly before baking.

DIRECTIONS

Cream shortening and sugar together; beat in egg. Add molasses and lemon juice; blend well. Mix and sift dry ingredients; add to creamed mixture. Add boiling water; mix well. Chill thoroughly. Drop by teaspoonfuls on greased cookie sheets. Sprinkle with sugar. Bake at 350° for 8 to 10 minutes. Makes 4 dozen small cookies.

For large cookies: Drop by tablespoonfuls. Bake for 10 to 15 minutes. Makes about 2 dozen cookies.
