Catholic Recipe: Boel’s Pepparkakor

    INGREDIENTS

  • 3-1/2 cups white sugar
  • 1-3/4 cups butter or margarine
  • 1 cup canned milk or cream
  • 2 tablespoons cinnamon
  • 2 tablespoons cloves
  • 2 tablespoons ginger
  • 2 tablespoons soda
  • 1 cup dark Karo syrup
  • About 6 cups flour

This ginger cookie recipe has lots of sugar, but beginners will find this easy to roll out thinly. These ginger snaps are a traditional cookie for St. Lucy (Lucia) day in Sweden.

DIRECTIONS

Melt butter (or margarine) and cool. Add sugar, syrup and canned milk or cream. Mix flour with spices and soda and work into liquid mixture. Let dough rest overnight. Roll out very thin and cut with different cookie cutters. Bake on greased cookie sheets 5 to 7 minutes. Watch cookies carefully.
