Catholic Recipe: Boel’s Pepparkakor
Also Called: Ginger Snaps
This ginger cookie recipe has lots of sugar, but beginners will find this easy to roll out thinly. These ginger snaps are a traditional cookie for St. Lucy (Lucia) day in Sweden.
Melt butter (or margarine) and cool. Add sugar, syrup and canned milk or cream. Mix flour with spices and soda and work into liquid mixture. Let dough rest overnight. Roll out very thin and cut with different cookie cutters. Bake on greased cookie sheets 5 to 7 minutes.
