Catholic Recipe: Baked Pancakes with Apple Filling

    INGREDIENTS

    Batter:
  • 1 1/2 teaspoons butter melted, cooled
  • 3 egg yolks, well beaten
  • 6 tablespoons sifted all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons sugar
  • 3/4 cup milk
  • 3 egg whites, beaten stiff
  • butter  Filling:
  • 2 1/2 cups apples, cut in thin julienne strips
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons sugar
  • 1/3 cup butter, melted
  • 1/3 cup sugar
  • 1/3 cup bread crumbs

DIRECTIONS

Batter:
Combine butter with egg yolks. Sift flour, salt, sugar together. Beat into mixture. Add milk, gradually. Add egg whites. Fry in small skillet using very little batter and tilting pan in all directions to get batter to cover surface. Filling:
Season apples with cinnamon, sugar. Fill pancakes. Roll up. Fold ends of pancakes under. Place closely together in buttered baking pan. Brush with melted butter. Combine sugar, bread crumbs, leftover butter. Sprinkle on pancakes. Bake 20-30 minutes at 375°. Yield, 15-18 filled pancakes
