Catholic Recipe: Carrott Cheese Puffs

    INGREDIENTS

  • 1 1/2 cups grated raw carrot
  • 3/4 cup grated American cheese
  • 2 1/2 cups soft bread crumbs
  • 1/2 teaspoon salt
  • 2 teaspoons minced onion
  • 3 tablespoons Sauterne
  • 1 egg, separated
  • 1/4 cup fine bread crumbs
  • few grains pepper

DIRECTIONS

Combine carrot, cheese, bread crumbs, salt, pepper, onion, wine, egg yolk. Beat egg white until stiff; fold into carrot mixture. Form into 6 balls (1/3 cup mixture for each ball). Roll balls in fine bread crumbs. Place in well-greased shallow baking pan. Bake 30 minutes at 350°. Yield, 6 servings
