Catholic Recipe: Pigs' Feet in Gravy

  • 3 or 4 pigs' feet, well cleaned
  • 2 large onions
  • 24 whole cloves
  • 2 tablespoons flour, browned

DIRECTIONS

Place pigs' feet in large casserole with water to cover. Add onions, each studded with 12 cloves. Cook 2 hours. Mix 2 tablespoons browned flour with 1 cup stock from casserole. Return to casserole. Cook 5 minutes, stirring constantly. Yield, 4 servings
