Catholic Recipe: Meat Loaf Trio
This recipe makes 3 meatloaves. This should be made ahead of time, even overnight and served cold at a picnic.
Combine evaporated milk and bread crumbs. Allow crumbs to soften; beat to blend. Stir in seasonings. Add onion and beef; mix well. Pack 1/3 of mixture into 9 x 5 x 3-inch loaf pan to make loaf shape. Invert on one end of jelly roll pan lined with aluminum foil. Repeat to shape 2 more loaves. Bake at 350° for 1-1/4 hours. Chill.
