Catholic Recipe: Meat Loaf Trio

    INGREDIENTS

  • 2 large cans (1 2/3 cups each) evaporated milk
  • 1 quart soft bread crumbs
  • 1-1/2 Tablespoon salt
  • 1-1/2 Tablespoon ground mustard
  • 3/4 teaspoon pepper
  • 1-1/2 teaspoons thyme or marjoram
  • 1-1/2 cups minced onion
  • 6 pounds lean beef, ground

This recipe makes 3 meatloaves. This should be made ahead of time, even overnight and served cold at a picnic.

DIRECTIONS

Combine evaporated milk and bread crumbs. Allow crumbs to soften; beat to blend. Stir in seasonings. Add onion and beef; mix well. Pack 1/3 of mixture into 9 x 5 x 3-inch loaf pan to make loaf shape. Invert on one end of jelly roll pan lined with aluminum foil. Repeat to shape 2 more loaves. Bake at 350° for 1-1/4 hours. Chill. Makes 24 servings.
