Catholic Recipe: Roast Goose with Fruit Stuffing

    INGREDIENTS

  • 2 packages bread stuffing mix
  • 3 ripe bananas, mashed
  • 1 cup halved, seeded Tokay grapes
  • 2 tart apples, pared and diced
  • 2 oranges, sectioned
  • 1 cup broken walnut meats
  • 10-12 pound goose for roasting

Fresh fruit and walnuts in this bread stuffing gives a sweet taste to the Thanksgiving goose. Apple stuffing is another popular alternative, which is provided here.

DIRECTIONS

Prepare bread stuffing as directed on package. Blend in bananas. Add remaining ingredients; mix well. Makes enough for 10- to 12-pound bird.

Apple Stuffing: Replace bananas, grapes, and oranges with 1 cup each minced onion and celery, and increase apples to measure 4 to 5 cups. Omit walnut meats if preferred. Mix vegetables and fruit with bread stuffing prepared according to package directions.

Roast goose: Stuff, close cavity, and skewer. Roast uncovered at 325° at rate of 25 minutes per pound. Pour off fat as it accumulates.
