Catholic Recipe: Butterscotch-Walnut Apples on Sticks

    INGREDIENTS

  • 6 medium-sized apples
  • 1 cup sugar
  • 1 cup light corn syrup
  • 1 cup light cream
  • 2 Tablespoons butter or margarine
  • few grains salt
  • 1/2 teaspoon vanilla
  • 18 walnut halves

Here's a variation of caramel apples, but with a butterscotch-walnut flavoriing. Simple and delicious.

DIRECTIONS

Wash and dry apples; insert wooden sticks. Combine sugar, corn syrup, and cream in a large saucepan. Cook rapidly, stirring constantly, to 245° (firm ball stage). Remove from heat at once. Stir in butter, salt, and vanilla. Dip apples quickly. Garnish each apple with 3 walnut meats placed around stick.
