Catholic Recipe: Crown Roast of Pork

Another popular Christmas entrée is Roast Pork which is recommended in our fifth sample Christmas menu.

DIRECTIONS

Select 6- to 7-pound crown roast. Place on rack in open roaster or shallow baking pan. Roast at 350° for 32 to 35 minutes per pound. If stuffing is used, place on aluminum foil in center of roast (use bread or fruit stuffing to taste). Cover with foil for 1/4 of roasting time. Remove foil to brown top of stuffing lightly, and allow 1/2 to 3/4 hour longer roasting time.
