Catholic Recipe: Spatzle
Also Called: Dumplings
In many parts of Germany it is customary to eat only Spätzle (Dumplings) and stewed fruits for the evening meal on Good Friday.
Sift the flour with the salt into a bowl. Add the eggs and the milk and water. Stir until smooth. Then, with a fork dipped in boiling water, cut the dough in small pieces into boiling water. Boil for a few minutes until they rise to the top. Cover with bread crumbs fried in butter. Serve with warm stewed prunes or other dried fruits.Recipe Source: Feast Day Cookbook by Katherine Burton and Helmut Ripperger, David McKay Company, Inc., New York, 1951
