Catholic Recipe: Spanish Wind
Also Called: Meringue Cookies, Kisses
Use this traditional Christmas meringue cookie as an ornament for the tree, like the Trapp family did.
The Feast of St. Thomas the Apostle was traditionally on December 21. Although the feast is now moved the July 3rd, this day still marks in Europe many customs, and also marks the final countdown for baking and cleaning for Christmas.
DIRECTIONS
Beat whites until stiff. Add 3/4 cup confectioners' sugar gradually; beat mixture until marshmallowy. Mix the cornstarch and remaining sugar and fold gently into the egg-white mixture. Put through pastry tube onto greased pan lined with waxed paper in the form of small wreaths. Bake in a slow oven, 275° F., for 45 minutes.
