Catholic Recipe: Cocoanut Busserln

These Austrian meringue coconut cookies were a Trapp Family Christmas favorite.

The Feast of St. Thomas the Apostle was traditionally on December 21. Although the feast is now moved the July 3rd, this day still marks in Europe many customs, and also marks the final countdown for baking and cleaning for Christmas.

DIRECTIONS

Beat the white of egg until stiff. Stir in the sugar well. Fold the shredded cocoanut in last. Drop mixture from tip of spoon 1/2 inch apart on greased cookie sheets. Bake in a slow oven, 250° F., for 45 minutes. Remove from pan when slightly cool.
