Catholic Recipe: Caramel Icing

The Hungarian dessert Dobos Torta is suitable for celebrating the feast of St. Stephen of Hungary. This caramel icing is the final touch to the cake.

St. Stephen's feast is now celebrated on August 16, instead of August 20, and is an optional memorial on the General Roman Calendar.

DIRECTIONS

Place sugar in saucepan. Stirring constantly, cook over low fire until golden amber. Pour at once over top layer. Tilt baking sheet all directions, and spread quickly with buttered spatula. Before icing hardens, mark off 12 to 14 servings with buttered knife. Place the top iced layer on cake. Chill until ready to serve.
