Feasts (2)

This creamy chocolate filling accompanies the Dobos Torta, a Hungarian seven layer cake, suitable for the feast of St. Stephen of Hungary. St. Stephen's feast is now celebrated on August 16, instead of August 20, and is an optional memorial on the General Roman Calendar.

DIRECTIONS

Break chocolate into small pieces in a saucepan. Add sugar and coffee. Bring to a boil over a low flame. Remove from stove and cool slightly. Add butter and flavoring. Beat until creamy. Cool cake and filling 10 minutes before spreading and stacking layers. Don't spread filling over top layer — put it aside on a buttered cookie sheet.
