Catholic Recipe: Boiled Dressing

    INGREDIENTS

  • 1 teaspoon dry mustard
  • 1 Tablespoon sugar
  • 1/2 teaspoon salt
  • 2 Tablespoons flour
  • 1/2 teaspoon paprika
  • 1/2 cup water
  • 2 egg yolks
  • 1/4 cup vinegar
  • 2 Tablespoons butter
  • sour cream (optional)

This boiled dressing accompanies the cole slaw, which make a great accompaniment for your American Christmas meal.

DIRECTIONS

Dissolve the dry ingredients in the cold water and mix thoroughly. In the top of a double boiler beat the egg yolks with the vinegar and add the dissolved ingredients. Cook, stirring constantly over boiling water until smooth. Add the butter and cool. When chilled, the dressing may be thinned with sour cream if desired.
