Catholic Recipe: Beef in Beer

    INGREDIENTS

  • 2 lb rump steak
  • 2 onions 125g/
  • 4 oz field mushrooms
  • 2 crushed cloves garlic
  • 2 slices bacon
  • 1 bay leaf
  • 1 oz butter 30g/
  • 1 oz flour 1/2 litre/
  • 1 pint strong ale
  • salt and freshly ground black pepper
  • 1 tbsp red wine vinegar

For the feast of St. Thomas More and St. John Fisher try cooking this English stew served with boiled potatoes.

DIRECTIONS

1 Trim the meat of all fat and cut it into 1-inch cubes. Cut the bacon into small dice. Slice the onions.

2 Melt the butter in a large frying pan, brown the cubes of meat and turn these into an oven-proof casserole. Fry the bacon until it is crisp, add the onions and let them acquire a golden colour. Slice and lightly fry the mushrooms; add them to the meat.

3 Sprinkle the flour over the contents of the casserole, add the seasonings, stir everything together well and cover with the beer. Cook in the oven at 325 degrees for 2 hours.

4 Just before serving, check the seasoning and stir in the wine vinegar.
