Catholic Recipe: St. Joseph's Cream Puffs IV

There is a special dessert for the Solemnity of St. Joseph (March 19) called St. Joseph's Sfinge. It is a huge cream puff, filled with a creamy cheese mixture and lavishly decorated with candied fruits. You might like to serve this simple version. Make cream puffs according to directions on back of mix. (If you have your own favorite recipe, use that.) Cool the pastry, slit and fill with this mixture:

DIRECTIONS

Mix cheese with chocolate and orange rind. Add flavorings, milk, and sugar to taste. Beat until smooth and custard-like. Fill puffs and chill. Before serving, top with cherry and orange peel.
