Catholic Recipe: Pankuski (Doughnuts)

    INGREDIENTS

  • 1 cake yeast
  • 1 tablespoon sugar
  • 1 cup lukewarm milk
  • 5 cups all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1/8 teaspoon cloves
  • 1/8 teaspoon cinnamon
  • 1/4 lb. margarine
  • 1 cup milk
  • 3 eggs, beaten
  • Granulated sugar

DIRECTIONS

Dissolve yeast and 1 tablespoon sugar in lukewarm milk. Sift together dry ingredients. Cut in margarine and mix as for pie dough. Add 1 cup milk, beaten eggs and yeast mixture. Knead 15-20 minutes. Let rise about 1 hour. Roll out on floured board to 1/2-inch thickness and let rise 30 minutes longer. Cut with doughnut cutter, and fry in deep hot fat until golden brown. Drain on absorbent paper and sprinkle with granulated sugar.
